Which would be a good expansion if I sometimes just want to kill lots of monsters and level up and not do quests?

Monsters respawn after about a seven day/night cycle so you can do that in the base game. Beyond that it depends what level you are. If you're low level Thor's Hammer would probably work. All the expansions have quests but they also all have monsters. : )
