So what happens if I get over encumbered, but I don't want to get rid of my stuff. Can I put my stuff in one of those in game containers like barrels etc? Will they stay there indefinitely, or will they _expire_ if left too long?

There are a few containers with persistent storage, this means your stuff will stay there until you take it out again. But most containers don't keep your things, unfortunately.
