Why can i only duel wield the dirk in my left?

Yes, yes. You can't dual wield just any combination of weapons. You can generally only equip short swords in your "off-hand". You can use the butterfly short sword in Matras and upgrade to Thurm's sword for beating his quests on the peninsula west of Matras.

Hi, I'm just finishing HOL 3. Awesome game by the way. There is a man in Pokoygrad looking to purchase Thurm's sword, but I think I sold it. Am I out of luck on this one because I checked all my storage areas and I can't find it in those. Thanks again.

There are some traders in Pokoygrad Center in HOLIII who will trade you gold for some items left over from the base game. That's because some players asked me to do that. if you don't have the item, don't worry about it. You can get a lot of gold otherwise.
